Ang Koo Kueh

Ingredients

300 g rice flour

2 tablespoons corn flour

1 pinch red powder for colouring

225 g yellow beans

200 g sugar

peanut oil

banana leaves

Method

1. Wash and drain the rice flour.

2. Mix the rice flour, corn flour and red powder into an even-coloured dough.

3. Split the yellow beans into ½ and soak in water for 4 hours.

4. Steam them for 1 hour and wash till fine.

5. Mix beans with sugar and cook until dry.

6. Roll out a portion of the red rice mixture flat on a board.

7. Put 1 tablespoon of bean paste on it and seal it up.

8. Press the greased ang koo kueh mould on it.

9. Stick a banana leaf at the base of the ang koo kueh.

10. Steam the kueh for 20 minutes.
