Fried Carrot Cake
This recipe has already been modified to be more beneficial to your health
Ingredients for Carrot Cake
2 cups of rice flour
3 cups of water
1 big radish - shredded
two tbsp of vegetable oil
2 eggs
Preserved radish (chai-poh)
Spring onions
1 tsp of minced garlic
Steps for Frying the Carrot Cake
1. Mix 2 cups of rice flour with 3 cups of water.
2. Add in the shredded radish
3. Stir mixture over low heat till it thickens .
4. Pour mixture into a bowl and steam for 30 minutes or until it is firm .
5. Let the carrot cake cool.
6. When cooled, dice the carrot cake into chunky pieces.
7. Heat the two tbsp of oil in a frying pan
8. Add 1 tsp of minced garlic
9. Add about 2 handfuls of diced carrot cake
10.Brown the carrot cake by stir frying
11.Add 2 tsp of preserved radish and two eggs
12.Pan fry till eggs are slightly brown and crispy.
Garnish with diced spring onions (To serve: 1 serving)
