Chapati

Ingredients

2½ cups wheat flour, sieved (atta)

2 cups water

pinch of salt

Method

1. Add the salt to the atta.

2. Make a hole in the flour and slowly pour water and make into dough.

3. Knead for 5 minutes. Leave in the refrigerator for 1 hour and cover it with a wet cloth.

4. Heat a flat pan (tawa) over medium heat.

5. Shape ½ a handful of dough into a ball. Flatten slightly and dust with flour.

6. Roll out evenly on a lightly floured board into flat round shapes about 3 mm thick.

7. When the tawa is smoking hot, place a chapati on it for about 1 minute.

8. Turn it over and leave for another minute.

9. Press gently with a small towel all round until it is brown in colour.

10. Remove and keep in a dish covered with a towel.

11. Serve with vegetable or meat curry.
