Hainanese Chicken Rice

Ingredients for Chicken

1.large chicken –without skin

2 pieces ginger

2 cloves garlic

2 teaspoons sesame oil

1 teaspoon light soy sauce

Ingredients For Rice

600g long grain rice

3 cloves garlic

1 piece ginger --2cm

3 cups chicken stock

3 cups water

Ingredients For Chilli Sauce

6 fresh red chillies

1 clove garlic

1 piece garlic -- 2cm

1 teaspoon vinegar/ lime juice

2 teaspoons chicken stock

Steps for Cooking the Chicken

1. Boil some water in pot large enough to hold whole chicken.

2. Clean the chicken.

3. Add the ginger and garlic to the water in the pot.

4. Carefully, put the chicken into the boiling water. Leave the pot uncovered while the water boils.

5. Let the chicken cook in the water for 2-3 minutes, then turn off the heat.

6. Let the chicken cool in the covered pot for 20 minutes.

7. Repeat whole process.

8. Test if the chicken is thoroughly cooked by pricking it with a toothpick

9. When the chicken is ready, take it out and place it into a colander.

10. Brush it with a mixture of sesame oil and soy sauce. Leave it aside to dry.

11. To the remainder of the soup, add in the cut pieces of chicken neck, legs and wings.

12. Season soup with 2 cups of vegetables of your choice and simmer until cooked.

13. Season lightly with salt, pepper and spring onion. Keep warm.

Steps for Cooking the Rice

1. Clean the rice by rinsing

2. Place rice in the pot of a rice cooker

3. Add stock, water, garlic and ginger

4. Cook till rice is ready
