Chilli Crabs

Gimme a glass of water-- QUICK!

Ingredients

2 medium sized raw crabs, thoroughly washed

½ cup cooking oil

2 teaspoons ginger, finely grated

3 cloves garlic, finely chopped

3 fresh red chillies, seeded and chopped

¼ cup tomato sauce

½ cup chilli sauce

1 tablespoon sugar

1 tablespoon light soy sauce

1 teaspoon salt

Method

1. Remove the top shell, stomach bag and fibrous tissue and chop each crab into 4 pieces, or 6 pieces if they are large.

2. Fry the crab over high heat until they change colour, turning them so they cook well all over. Place on a plate.

3. Over low heat, fry the ginger, garlic and red chillies, stirring constantly, until they are cooked but not brown.

4. Add the sauces, sugar, soy sauce and salt and bring to the boil.

5. Return the crabs to the wok and allow to simmer in the sauce for 3 minutes, adding a very little amount of water if the sauce reduces too drastically.

6. Serve with white rice.
