Hor-fun

Ingredients

2 rounds of rice noodles

500ml (18 oz) water

100g (4 oz) lean pork, cut into 5cm (2 inch) strips

75 g (3 oz) uncooked shelled prawns

74g (3 oz) squid, cleaned and sliced

4 tablespoons vegetable oil

2 garlic cloves, peeled and crushed

75g (3 oz) beansprouts

1 tablespoon light soy sauce

1 tablespoon dark soy sauce

1/2 teaspoon pepper

1 bunch fresh chives, chopped

2 eggs

Method

1. Boil the noodles in plenty of water for 2 minutes and drain.

2. Bring the 500ml of water to the boil and cook the pork, prawns and squid for 5 minutes. Drain and reserve the stock.

3. Heat the oil in a wok or frying pan and fry the garlic till light brown.

4. Add the beansprouts and noodles and cook, stirring, for 2 minutes over high heat.

5. Add the cooked ingredients, sauces, seasoning and chives and stir for another few minutes.

6. Push ingredients to one side of the pan and crack in the eggs.

7. Cook for 1 minute and add the rest of the stock.

8. Bring to the boil and cook for 2 minutes, stirring well.

9. Turn the noodles on to a plate and serve at once. Serve sliced chillies and vinegar with it.
